Ingredients

  • 600g/1lb 5oz baby potatoes, washed and halved

  • 1 Tbsp olive oil

  • 1 soy Vienna sausages, sliced

  • 1 small red onion, sliced

  • 10 cherry tomatoes, halved

  • 1 green pepper, deseeded and diced

  • 15 black olives, deseeded and halved

  • salt and black pepper

For the Dressing:

  • 2 Tbsp whale-grain mustard

  • 6 Tbsp extra-virgin olive oil

  • 2 Tbsp balsamic vinegar

  • 2 tsp honey

Serves 4


Method:

  1. Put the water and potatoes in a pan, bring to a boil, and cook for about 10 minutes.

  2. Meanwhile, heat the olive oil in a skillet, and sauté the wieners for 4 to 5 minutes. Rinse and soak the sliced onion in water until you are ready to use it.

  3. Put the potato, wiener, onion, tomatoes, bell pepper, and olives in a bowl and generously sprinkle with salt and pepper.

  4. In a jar, mix the mustard, oil, vinegar, and honey. Pour the dressing into the bowl and mix well with the other ingredients. Serve.

Note: Sausage and saveloys made with soy are spicy, complex creations which are a great addition to the sausage family. They are a little fragile and should only be sliced after cooking.
