Potato and Soy
Sausage Salad

Ingredients

600g/1lb 5oz
baby
potatoes,
washed and halved

1 Tbsp olive
oil
-
1 soy Vienna
sausages, sliced

1 small red onion, sliced
-
10 cherry tomatoes,
halved
-
1 green pepper,
deseeded and diced
-
15 black olives,
deseeded and halved
-
salt and black pepper
For the Dressing:

Method:

Put the water and
potatoes
in a pan, bring to a boil, and cook for about 10
minutes.

Meanwhile, heat the olive oil in a
skillet, and sauté the
wieners for 4 to 5 minutes. Rinse and soak the
sliced onion in water until you are ready to use it.

Put the potato, wiener, onion, tomatoes, bell
pepper, and olives in a bowl and generously sprinkle
with salt and pepper.

In a jar, mix the mustard,
oil, vinegar, and honey. Pour the dressing into the
bowl and mix well with the other ingredients. Serve.
Note:
Sausage and saveloys made with soy are spicy,
complex creations which are a great addition to the
sausage family. They are a little fragile and should
only be sliced after cooking.
