Mixed Bean Salad

Ingredients

200g/7oz green beans, trimmed and halved

6 Tbsp tinned soy beans

4 Tbsp tinned butter beans
-
4 Tbsp tinned red kidney beans

1 shallot, sliced
For the Dressing:
-
1/2 clove garlic, finely chopped
-
2 Tbsp freshly squeezed lemon juice
-
4 Tbsp extra-virgin olive oil
-
salt and black pepper
-
1 Tbsp chopped fresh parsley
-
2 medium tomatoes, sliced for decoration
-
black olives for garnishing
Serves 4
Method:
-
Cook the green beans in a pan of boiling water for 3
to 4 minutes and drain. Rinse the beans well.

Put
all the beans and the shallot in a bowl, sprinkle
with salt and pepper and mix well.

Combine the
garlic, lemon juice, oil and parsley in a jar and
shake well.

Lay the sliced tomato on a serving
dish, pile the bean mixture in the centre, sprinkle
with dressing and garnish with olives.
Note: A
good bean salad needs a tangy dressing to succeed.
The garlic and lemon-based dressing provides a tasty
complement to the texture of the salad.
