Ingredients

  • 1 Tbsp virgin olive oil

  • 6 soy sausages

  • 250g/9oz couscous

  • 1/2 green pepper, seeded and chopped

  • 4 Tbsp chopped fresh mint

  • 4 Tbsp chopped fresh parsley

  • 1/2 cup/100ml/4fl oz extra virgin olive oil

  • 5 lemons, juice squeezed

  • salt and black pepper

  • 1 medium tomato, chopped

  • mint leaves and olives for garnishing

Serves 4


Method:

  1. Heat the oil in a frying pan and brown the sausages lightly. Slice into 1 cm/1/2-in rounds.

  2. Add the couscous to a pan containing twice the volume of water. leave to swell for 5 minutes before draining.

  3. Put the couscous, the sliced sausages, chopped pepper, mint and parsley in a bowl and stir in the oil and lemon juice. Season with salt and pepper.

  4. Serve the couscous in a bowl or on a plate, add the chopped tomatoes, and garnish with the mint and olives.

Note: A modern, healthy interpretation of a Levantine favorite.
