- Minty Couscous and Soy Sausage Salad

Ingredients

1 Tbsp virgin olive oil

6 soy sausages
-
250g/9oz
couscous
-
1/2 green pepper, seeded and chopped
-
4 Tbsp chopped fresh mint
-
4 Tbsp chopped fresh parsley
-
1/2 cup/100ml/4fl oz extra virgin olive oil
-
5 lemons, juice squeezed
-
salt and black pepper
-
1 medium tomato, chopped
-
mint leaves and olives for garnishing
Serves 4
Method:

Heat the oil in a frying pan and brown the sausages
lightly. Slice into 1 cm/1/2-in rounds.

Add the
couscous to a pan containing twice the volume of
water. leave to swell for 5 minutes before draining.

Put the couscous, the sliced sausages, chopped
pepper, mint and parsley in a bowl and stir in the
oil and lemon juice. Season with salt and pepper.

Serve the couscous in a bowl or on a plate, add the
chopped tomatoes, and garnish with the mint and
olives.

favorite.
