Ingredients

  • 200g/7oz tempeh

  • oil for deep frying

  • 2 iceberg or butter lettuce leaves

  • 1 tomato, sliced

  • 4cm/1 1/2 in slice of cucumber

  • Chili sauce

Serves 4


Method:

  1. Cut the tempeh in half, then slice into 1cm/1/2-inch pieces. Heat the oil to 170°C (325°F).

  2. Deep-fry the tempeh for about 5 minutes or until golden brown. Drain well on paper towels.

  3. Place the tempeh on a bed of lettuce and garnish with the sliced tomato and cucumber.

  4. Serve the chili sauce separately in a saucer.

Note: Thai chili sauce is widely available in supermarkets and Asia groceries. It is mostly used with Thai crisp spring rolls and has a sweet, piquant flavor. For those who prefer not to use chopsticks it may be better to drizzle the chili sauce over the dish rather than have it in a separate dish for dipping.
