Creamy Crab and
Sweetcorn Croquettes

30g/1oz
soy margarine
-
1/2 medium onion, chopped

30g/1oz plain flour
-
1/2 cup/100ml/4fl oz soy milk
-
50g/1oz sweetcorn
-
100g/3 1/2oz tinned, dressed crab plain flour
-
1 egg, beaten
-
breadcrumbs
-
oil for deep frying
Makes 8 croquetties
Method:

Melt the margarine in a pan, add the onion and fry
for 3 to 4 minutes.

Add the flour, stirring well,
then gradually pour the milk in, a little at a time,
to thicken the sauce. Turn off the heat.

Add the sweetcorn and crab, and mix well. Let the
mixture chill in the refrigerator for 30 minutes.

Divide the mixture into eight, and form into
croquette shapes. Coat the eight croquettes in the
following order: flour, egg, breadcrumbs. Leave them
to stand again for 15 minutes.

Heat the oil to 170°C (325°F). Deep-fry the
croquettes until golden brown. Remove from the pan
and drain on paper towels before serving.
Note: A
recipe that is worth the effort. these croquettes
are extremely versatile and suitable for anything
from hors D'oeuvers to picnics. They are a favorite
with children.
