Classic Tofu and
Sweet Miso Sauce

Ingredients

500g/1lb
2oz tofu, cut into 2 x 5cm/1 in cubes

3 Tbsp white miso

1 1/2 Tbsp mirin

3 Tbsp sugar

Tbsp Japanese fish or vegan stock

spring onion, sliced diagonally
Serves 4
Method:

Put the tofu and water in a pan, and bring to a boil
for about 4 minutes, and then drain.

Meanwhile, put
the miso, mirin, sugar and stock into another pan,
and bring to a boil. Simmer for 1 minute, stirring
all the time.

Place the tofu on a plate, pour the miso sauce on it and sprinkle with the sliced spring
onion. Serve hot or cold.
Note: A
traditional Japanese dish, the strong flavor of the
sauce means that there is no need to marinate the
tofu beforehand. This dish is most often made using
white miso but a dark miso really does just as well.
