Fried Tofu in Tomato Sauce

Ingredients

150g/5oz
broccoli florets
-
400g/14oz
firm tofu, cut into bitesize pieces,
1
cm/1/2in thick

Tbsp soy or sunflower oil
For the Tomato Sauce:

clove garlic, finely chopped
-
1
shallot, finely chopped
-
1
small red chili pepper, chopped
-
400g/14oz
tinned tomatoes
-

Tbsp fish sauce (nuoc mam)

2 tsp sugar
-
1
Tbsp fresh coriander leaves, chopped

Tbsp fresh mint leaves, chopped
-
sliced cucumber to garnish
Serves 4
Method:

Boil the broccoli in a pan of hot water for 3
minutes and drain. Heat 3 tablespoons of the oil in
a frying pan and fry the tofu, browning it on both
sides.

Heat the the remaining oil in a pan,
stir-fry the garlic, shallot and chili pepper for 2
minutes.

Add the tomatoes, fish sauce and sugar and
simmer for about 15 minutes. Add the broccoli, tofu,
coriander and mint.

Arrange the tofu mixture on a
serving dish and garnish with sliced cucumber.
