Ingredients

  • 150g/5oz broccoli florets

  • 400g/14oz firm tofu, cut into bite­size pieces, 1 cm/1/2in thick

  • 4 Tbsp soy or sunflower oil

For the Tomato Sauce:

  • 1 clove garlic, finely chopped

  • 1 shallot, finely chopped

  • 1 small red chili pepper, chopped

  • 400g/14oz tinned tomatoes

  • 2 Tbsp fish sauce (nuoc mam)

  • 2 tsp sugar

  • 1 Tbsp fresh coriander leaves, chopped

  • 1 Tbsp fresh mint leaves, chopped

  • sliced cucumber to garnish

Serves 4


Method:

  1. 1 Boil the broccoli in a pan of hot water for 3 minutes and drain. Heat 3 tablespoons of the oil in a frying pan and fry the tofu, browning it on both sides.

  2. Heat the the remaining oil in a pan, stir-fry the garlic, shallot and chili pepper for 2 minutes.

  3. Add the tomatoes, fish sauce and sugar and simmer for about 15 minutes. Add the broccoli, tofu, coriander and mint.

  4. Arrange the tofu mixture on a serving dish and garnish with sliced cucumber.
