Teriyaki Tofu

Ingredients

2 Tbsp
sunflower oil

600g/1lb
7oz firm tofu, diced into 1cm/1/2in cubes

6 Tbsp
Japanese soy sauce

4 Tbsp mirin
-
4 Tbsp sugar

25g/1oz bean sprouts, rinsed

spring onion, chopped

1
Tbsp toasted sesame seeds
Serves 4
Method:

Drain the excess water from the tofu on a cloth for
3 to 4 minutes.

Heat the oil in a frying pan and
lightly brown the tofu. Remove the tofu from the oil
and drain on paper towels.

In the same pan, put
the soy sauce, mirin and sugar. Bring to a boil and
simmer for a few minutes, until the sauce has
thickened.

Return the tofu cubes to the pan and
stir for 1 to 2 minutes.

Garnish with the bean
sprouts and the chopped spring onion, then sprinkle
with the sesame seeds and serve.
Note:
Teriyaki, A Japanese dish, means literally "Grilled
to a Shine". The Teriyaki method can be applied to
many different foods rather than just to tofu. In
Japan, the most common ingredient cooked in this way
is chicken.
