Tagliatelie with
Salmon in a White Sauce

Ingredients

450/1lb
tagliatelle
-
2 Tbsp extra-virgin olive oil

400g/14oz boneless salmon, diced

200g/7oz fresh baby spinach leaves

4 Tbsp white wine
-
1
cup/250ml/9fl oz soy cream
-
2 Tbsp freshly squeezed
lemon juice

salt and black pepper
Serves 4
Method:

1 Add the tagliatelle
and 1 tablespoon of oil to a pan of boiling water,
cook until al dente (firm to the bite), then
drain.

Heat the remainder of the oil in a frying
pan and fry the salmon for 6 to 7 minutes. Add the
spinach and fry for 2 to 3 more minutes.

Add the
white wine and continue to stir
for 2 to 3 minutes, then add the cream and lemon
juice. Season with salt and pepper to taste.

Stir
the sauce into the tagliatelle, and serve hot.
Note:
Using soy cream in this dish not only reduces the
fat and cholesterol content, but also enhances the
subtle flavor of the fresh salmon.
