Stir-Fried Tofu
and Cabbage

Ingredients

400g/14oz
firm tofu, drained, halved and sliced into 1cm/1/2in
thickness

5 Tbsp soy or sunflower oil

300g/11oz
cabbage leaves, core discarded, cut into large
bite sized pieces
-
1
medium onion, cut into large bite-sized pieces
-
1
green pepper, deseeded and cut into large bite-sized
pieces

100g/4oz
fresh shiitake mushrooms, halved

Tbsp tomato ketchup
-
1
Tbsp brown sauce
-
salt and black pepper
-
Boiled rice, to serve
Serves 4
Method:

Heat 3 tablespoons of the oil in a frying pan.
Lightly brown the tofu on both sides, then remove
and drain on paper towels. Clean the pan.

Heat the
remaining oil in the frying pan. Add the cabbage and
onion and stir-fry for 3 to 4 minutes. Add the
pepper and
mushrooms, and stir-fry for 2 to 3 minutes.

Add
the tofu, tomato ketchup and brown sauce and
stir-fry for 3 to 4 minutes. Season with the salt
and pepper to taste. Serve with rice.
Note:
Cabbage is a very underrated vegetable which has
never recovered from its image of being overcooked
and unappetizing. Properly prepared, it is delicious
and an excellent source of trace elements and
dietary fiber. Use your soft green cabbage for
stir-fry dishes. If you cannot find shiitake
mushrooms, use button mushrooms instead. When
stir-frying tofu, make sure the pan is very hot,
otherwise the tofu will stick on it.
