Ingredients

  • 250g/9oz dried medium rice noodles

  • 1 Tbsp sesame oil

  • 2 Tbsp sunflower or soy oil

  • 2 cloves garlic, finely chopped

  • 1 cm/1/2in ginger, finely chopped

  • 400g/14oz rump steak, thinly sliced

  • 1 green pepper, diced into large bite sized pieces

  • 1 red pepper, diced into large bite-sized pieces

  • 1 medium onion, diced into large bite-sized pieces

  • 1 Tbsp shaxoing rice wine or dry sherry

  • 5 Tbsp black bean sauce

  • 3 Tbsp Chinese light soy sauce

  • 2 tsp sugar

Serves 4


Method:

  1. Soak the rice noodles in hot water for 7 to 10 minutes, drain, and sprinkle with the sesame oil.

  2. Heat the sunflower or soy oil in a wok or frying t>an, add the garlic and ginger, and stir-fry for 1 minute.

  3. Add the beef and stir-fry for 3 to 4 minutes, then the bell peppers and onion, and stir-fry for 2 to 3 more minutes. Stir in the rice wine and cook for 1 minute.

  4. Add the noodles, black bean sauce, soy sauce and sugar and stir-fry for another 3 minutes. Serve immediately.

Note: Black bean sauce is a popular and ubiquitous Chinese ingredient, yet few people realize it is made from black soy beans. Most stir-fried noodles are low in fat and easy to prepare - It is no surprise that they have become so popular in recent years.
