Yoghurt-Marinated Spiced Chicken

Ingredients
For the Marinade:

clove
garlic, finely chopped

1 cm/1/2in ginger, finely
chopped

1 tsp ground cumin
-
1 tsp ground coriander
-
1 tsp ground turmeric
-
1/2 tsp ground
chili pepper

1/2 tsp salt
-
a pinch of black pepper

2/3 cup/150ml/5fl oz soy yoghurt
-
2 Tbsp chopped fresh
coriander

1 Tbsp sunflower oil
-
Basmati rice, to serve
Serves 4
Method:

Score the chicken breasts in a criss-cross pattern
with a knife to increase the absorption of the
marinade.

Mix the garlic, ginger, cumin, coriander, turmeric,
chili pepper, salt, pepper, yoghurt and coriander
together in a dish and marinate the chicken for at
least 1 hour. The longer you marinate the chicken,
the better it will taste.

Heat the oil in a frying
pan, and fry the chicken for about 5 minutes on each
side or until
cooked.

Add the rest of the marinade and fry for 2
to 3 more minutes. Serve with Basmati rice.
