Ingredients

  • 4 chicken breasts

For the Marinade:

  • 1 clove garlic, finely chopped

  • 1 cm/1/2in ginger, finely chopped

  • 1 tsp ground cumin

  • 1 tsp ground coriander

  • 1 tsp ground turmeric

  • 1/2 tsp ground chili pepper

  • 1/2 tsp salt

  • a pinch of black pepper

  • 2/3 cup/150ml/5fl oz soy yoghurt

  • 2 Tbsp chopped fresh coriander

  • 1 Tbsp sunflower oil

  • Basmati rice, to serve

Serves 4


Method:

  1. Score the chicken breasts in a criss-cross pattern with a knife to increase the absorption of the marinade.

  2. Mix the garlic, ginger, cumin, coriander, turmeric, chili pepper, salt, pepper, yoghurt and coriander together in a dish and marinate the chicken for at least 1 hour. The longer you marinate the chicken, the better it will taste.

  3. Heat the oil in a frying pan, and fry the chicken for about 5 minutes on each side or until cooked.

  4. Add the rest of the marinade and fry for 2 to 3 more minutes. Serve with Basmati rice.

Note: A highly spiced Indian dish.
