Soy Vienna Sausage
Courgettes and Red Pepper Kebabs

Ingredients

1 red pepper, deseeded and cut into large bite-sized
pieces
-
6 soy Vienna sausages, cut into 2.5cm/1 in rounds
-
1 medium onion, cut into large bite-sized pieces
-
6 medium zucchini (courgettes), cut into 2.5cm/1 in
rounds

salt and black pepper
For the marinade:
-
1 orange, freshly squeezed
-
1/2 lemon, freshly squeezed
-
1 Tbsp honey
-
1 Tbsp. chopped fresh coriander
Makes 8 skewers
Method:
-
To make the marinade, mix the squeezed orange and
lemon juice, honey, and coriander well in a bowl.
In this order, arrange red pepper, Vienna sausage,
onion and zucchini on ten skewers. Sprinkle with
salt and black pepper.

Marinate the kebabs in the
marinade for at least 30 minutes.

Grill the
kebabs, turning them occasionally.
Put the remaining marinade in a small pan. Bring to
a boil, then simmer for 2 to 3 minutes.

Place the
grilled kebabs on a plate and drizzle with the
marinade.
Note:
These delicious kebabs are ideal for a vegetarian
barbecue. You will know they are ready to eat when
the vegetables are cooked - there's no meat to wait
for!
