Ingredients

  • 125g/4oz Vegeburger soy mix

  • 1 small egg, beaten

  • 1/2 cupI110ml/4f1 oz water

  • 3 Tbsp extra-virgin olive oil

  • 1 clove garlic

  • 1 celery stick, chopped finely

  • 1 medium onion, chopped

  • 400g/14oz tinned tomatoes

  • 3 Tbsp red wine

  • 1 Tbsp chopped fresh basil leaves

  • 200g/7oz tinned soy beans

  • salt and black pepper

  • 450g/1lb dried fusili

  • a pinch of salt

Serves 4


Method:

  1. Combine the burger mix, egg and water in a bowl and leave to stand for 15 minutes.

  2. Meanwhile, heat the oil in a frying pan and fry the garlic, celery, and onion for 3 to 4 minutes. Add the tomatoes, red wine, basil and soy beans, and bring to a boil.

  3. Form the soy mixture into small walnut shapes and add them to the tomato sauce. Simmer for 20 to 30 minutes, and season with salt and black pepper to taste.

  4. Boil the fusili in a pan of hot water with a pinch of salt for 8 to 10 minutes, or until al dente (firm to the bite). Drain well.

  5. Serve the fusili in bowls topped with the 'meatballs' and hot tomato sauce.

Note: This delicious pasta dish makes an excellent warming meal. The "meatballs" become infused with the rich, garlicky tomato sauce.
