Soy Chili Con

Ingredients

4 Tbsp extra-virgin olive oil

3 cloves garlic,
finely chopped

1 large onion, finely chopped

200ml/7oz soy mince
-
200g/7oz button mushrooms, finely chopped

1 green pepper, deseeded and finely chopped
-
1 red pepper deseeded and finely chopped
-
400g/l14oz tinned tomatoes
-
400g/14oz tinned red kidney beans
-
1 3/4cups/400ml water
-
3 Tbsp tomato puree
-
1/2 tsp
chili powder
-
3 tsp ground cinnamon
-
3 tsp allspice
-
salt
Serves 4
Method:

Heat the oil in a pan, add the garlic and onion, and
fry for 2 to 3 minutes.

Add the soy mince,
mushrooms and peppers and fry for 3 to 4 minutes.

Add the canned tomatoes, red kidney beans, water,
tomato puree, chili powder, cinnamon and allspice.

Bring to a boil and
simmer
for 30 minutes. Season with salt to taste. Serve hot
with rice.
Note: If
you have ever been out off eating a beef chili corn
carne because of its oiliness or the film of fat
that forms on the leftovers, then this is the recipe
for you. If you like more heat, simply add more
chili.
