Ingredients

  • 125g/4oz Vegeburger soy mix

  • 1 small egg, beaten

  • 1/2 cup/110ml/4fl oz water

  • 4 Tbsp extra-virgin olive oil

  • 4 slices of eggplant (aubergine)

  • 1 green pepper, deseeded and quartered

  • 1 medium tomato, quartered

  • 4 slicks fresh tarragon

For the Pesto Sauce:

  • 30g/1 oz fresh basil leaves

  • 1 clove garlic

  • 1 Tbsp pinenuts

  • 3 Tbsp extra olive oil

  • 1/4 tsp salt

  • black pepper

Serves 4


Method:

  1. Put the burger mix, egg and water into a bowl. Leave to stand for 15 minutes or according to the instructions on the burger mix pack. Form into 4 burger shapes.

  2. Brush both sides of the burgers, eggplant, pepper and tomatoes with olive oil and fry in a griddle pan until lightly brown.

  3. Alternatively, you could use a frying pan, heating the oil in the pan first.

  4. Put the ingredients for the pesto sauce in a food processor, and blend to a puree.

  5. Pile up the tomato, bell pepper, burger, and eggplant on a serving plate. Secure them with a stalk of tarragon, drizzle with the pesto sauce, and serve.

Note: Both children and grown-ups will enjoy these. For the youngsters, you might think about serving burgers with the eggplant and peppers in fresh toasted buns. You can cheat and use a ready-make pesto sauce if you prefer, but you may need to add more olive to reach the desired consistency.
