Soy Bean Falafel

Ingredients

1 small
onion
-
2 cloves garlic
-
100g/4oz bread (about 4 slices)

1 tsp ground cumin
-
1 tsp ground coriander
-
1 fresh red chili pepper
-
1/2 tsp salt
-
1 Tbsp chopped fresh parsley
-
1 egg
-
400g/14oz tinned soy beans, drained

plain flour for coating
-
oil for shallow frying
Serves 4
Method:

Put the onion,
garlic,
bread, cumin, coriander, chili pepper, salt and
parsley in a food processor and chop coarsely.

Add
the egg and soy beans and process again until
coarsely chopped.

Form the bean mixture into balls
the size of golf balls then lightly flatten to a
patty shape and coat with flour.

Heat the oil in a
frying pan and shallow-fry the falafel until golden
brown. Drain well on paper towels.
Serve inside pitta bread with sliced tomatoes and
lettuce.
Note:
Falafel is typically made from chick-peas but soy
beans makes an equally tasty and nutritious
substitute.
