Soy Bean Fajitas

Ingredients

2 Tbsp soy or sunflower oil

1 red onion, sliced
-
6-8 soy sausages, sliced diagonally

1 red pepper, deseeded and sliced

1 green pepper, deseeded and sliced
-
2 cloves garlic, crushed
For the Seasoning:
-
2 cloves garlic, crushed
-
1/2 Tbsp ground cumin
-
1/2 Tbsp
ground coriander
-
1 Tbsp freshly squeezed lemon juice
-
1/4-1 tsp chili powder
-
1/2 tsp ground cinnamon
-
1 tsp sugar
-
1 tsp dried oregano
-
salt and black pepper
-
2 Tbsp
fresh coriander
-
8 tortillas
-
iceberg lettuce and sliced
tomato to garnish

Spicy Avocado and Red Pepper Dip (optional)
Makes 8
Method:

Heat
the oil in a frying pan, add the onion, sausage,
peppers and crushed garlic; stir-fry for 4 to 5
minutes.

Add the cumin, coriander, lemon juice,
chili powder, cinnamon, sugar and oregano, and
sprinkle with salt and pepper. Stir-fry for another
3 to 4 minutes. Stir in the coriander.

Serve hot
with tortillas, garnishing with lettuce and tomato,
and the Spicy Avocado and Red Pepper Dip (refer
recipe), if you like.
Note: If
you prefer a milder version of these fiery fajitas,
add only 1/4 teaspoon of chili powder.
