Ingredients

  • 2 Tbsp soy or sunflower oil

  • 1 red onion, sliced

  • 6-8 soy sausages, sliced diagonally

  • 1 red pepper, deseeded and sliced

  • 1 green pepper, deseeded and sliced

  • 2 cloves garlic, crushed

For the Seasoning:

  • 2 cloves garlic, crushed

  • 1/2 Tbsp ground cumin

  • 1/2 Tbsp ground coriander

  • 1 Tbsp freshly squeezed lemon juice

  • 1/4-1 tsp chili powder

  • 1/2 tsp ground cinnamon

  • 1 tsp sugar

  • 1 tsp dried oregano

  • salt and black pepper

  • 2 Tbsp fresh coriander

  • 8 tortillas

  • iceberg lettuce and sliced tomato to garnish

  • Spicy Avocado and Red Pepper Dip (optional)

Makes 8


Method:

  1. Heat the oil in a frying pan, add the onion, sausage, peppers and crushed garlic; stir-fry for 4 to 5 minutes.

  2. Add the cumin, coriander, lemon juice, chili powder, cinnamon, sugar and oregano, and sprinkle with salt and pepper. Stir-fry for another 3 to 4 minutes. Stir in the coriander. 

  3. Serve hot with tortillas, garnishing with lettuce and tomato, and the Spicy Avocado and Red Pepper Dip (refer recipe), if you like.

Note: If you prefer a milder version of these fiery fajitas, add only 1/4 teaspoon of chili powder.
