Salmon and Leek
Fish Pie with Fluffy Potato

Ingredients

potatoes,
peeled

450g/1lb fresh salmon steaks

1/3
cup/90ml/3fl oz soy milk
-
2/3
cup/150ml/5fl oz vegetable stock

40g/1/2
oz soy margarine
-
1
small leek, sliced

40g/1/2oz plain flour
-
1 tsp English made mustard
-
100g/4oz frozen peas
-

Tbsp fresh chopped parsley

salt and black pepper
Serves 4
Method:

Put
the potatoes and water in a pan and slowly bring to
a boil. When the liquid reaches boiling point,
remove from the heat and drain.

Put salmon, milk
and stock in another pan, bring to a boil and simmer
for 10 minutes. Take the salmon out and break it up
into flakes. Retain the liquid and let it cool.

Melt the margarine in a frying pan and fry the leek
until softened. Add the flour and stir for 1 minute.
Stir in the liquid little by little to incorporate
it evenly into the flour mixture.

Heat the oven to
200°C (400°F).

Add the mustard, and parsley, and mix well. Then add
the flaked salmon and season with salt
and pepper.

Grate the potatoes. Put the salmon
mixture into an oven dish and top with the grated
potatoes. Bake in the oven for 20 minutes or until
golden brown.
Note: A
variation on the traditional fisherman's pie with
soy substitutes for the dairy constituents.
