Red Cabbage, Apple
and Soy Sausage Casserole

Ingredients

2 Tbsp olive oil

8 soy sausages, halved
-
2 cloves garlic, finely chopped

1 red onion, sliced

1/2 small red cabbage, shredded

1 apple, chopped
-
75g/3oz raisins
-
4 Tbsp red wine
-
4 Tbsp red wine vinegar
-
2 Tbsp sugar
-
1 clove
-

Serves 4
Method:

Heat the oil in a pan. fry the sausages, garlic and
red onions for 3 to 4 minutes. Add the red cabbage
and fry for 4 more minutes.

Add the apple,
raisins, red wine, vinegar, sugar and clove.
Generously sprinkle with salt and pepper.

Simmer
with the lid on for 30 to 40 minutes before serving
with mashed potato made with soy butter or soy
milk.
