Mushroom Soy
Sausage and Spinach Spaghetti

Ingredients

450g/1lb spaghetti

4 Tbsp extra-virgin
olive oil

cloves garlic, sliced

soy
sausages, sliced diagonally

100g/4oz shiitake
mushrooms,
sliced

100g/4oz oyster
mushrooms, sliced

200g/7oz button mushrooms, sliced

100g/4oz fresh spinach

1/2 cup/120ml/4fl oz
white wine
-
salt and black pepper

4 Tbsp balsamic
vinegar
-
1 Tbsp chopped fresh
basil

Method:

Cook the spaghetti in a pan of boiling water until
al dente (firm to the bite). Drain.

Heat
the oil in a frying pan, add the garlic, and fry for
1 minute. Add the sausages, shiitake mushrooms,
oyster mushrooms and button mushrooms and the
spinach, and fry for 3 to 4 more minutes.

Add the
wine and season with salt and pepper to taste.
Continue to stir for about 3 minutes. Add the
balsamic vinegar and basil, and stir for 1 minute
more.

Add the spaghetti and combine well. Serve
hot.
Note:
There is an almost infinite number of pasta
combination. This recipe makes a light, healthy main
course. For a starter use half the stated
quantities.
