Ingredients

500g/17oz Japanese short grained, rinsed
-
3 cups/750ml/24fl oz vegetable stock
-
2 cups/450ml/16fl oz béchamel sauce
-
2 Tbsp olive oil
-
2 cloves garlic, finely chopped
-
1 medium onion,
chopped
-
1 green pepper, deseeded and chopped
-
400g/14oz mixed seafood (prawns,
squid, scallops, mussels, etc.)

6 Tbsp white wine
-
1 Tbsp chopped fresh parsley salt and pepper
-
1 Tbsp breadcrumbs
Serves 4
Method:
-
Cook the rice in the stock instead of in water
accordingly. Make the béchamel sauce as shown on page 15.

Heat the oil
in a frying pan, add the garlic, onion and pepper
and fry for 2 to 3 minutes. Add the mixed seafood,
white wine and parsley and season generously with
salt and pepper.

Add the cooked rice and stir-fry
well. Put the
rice mixture in a oven-proof dish.

Pour the béchamel
sauce over the mixture and sprinkle with the bread
crumbs. Cook under the grill until the top is
lightly browned. Serve hot.
