Marinated Tofu
Kebabs with Scallops

Ingredients

500g/1lb 2oz firm tofu, cut into 1 cm/1/2 in cubes

16 scallops, without shells
For the Marinade:
-
3 Tbsp light soy sauce
-
1 clove garlic, peeled and crushed
-
a few dashes of Tabasco sauce
-
1/2 red pepper, cut into 1 cm/1/2 in squares
-
salt and black pepper
-
4 butter or iceberg lettuce
-
leaves lemon wedges
Makes 8 skewers
Method:
-
Marinate
the tofu
and the scallops in the soy sauce,
garlic and Tabasco for 30 minutes.

Arrange the
scallops, tofu and pepper alternately on to
skewers.
Grill the kebabs for 8 to 1 0 minutes, occasionally
turning them over.

Sprinkle with the salt and black
pepper, and garnish with the lettuce leaves and
lemon.
Note:
Tofu and scallops are a perfect combination, with
the fresh soy sauce marinade adding a hint of spicy
heat. This dish is ideal for a summer barbecue.
