Ingredients

  • 500g/1lb 2oz firm tofu, cut into 1 cm/1/2 in cubes

  • 16 scallops, without shells

For the Marinade:

  • 3 Tbsp light soy sauce

  • 1 clove garlic, peeled and crushed

  • a few dashes of Tabasco sauce

  • 1/2 red pepper, cut into 1 cm/1/2 in squares

  • salt and black pepper

  • 4 butter or iceberg lettuce

  • leaves lemon wedges

Makes 8 skewers


Method:

  1. Marinate the tofu and the scallops in the soy sauce, garlic and Tabasco for 30 minutes.

  2. Arrange the scallops, tofu and pepper alternately on to skewers. Grill the kebabs for 8 to 1 0 minutes, occasionally turning them over.

  3. Sprinkle with the salt and black pepper, and garnish with the lettuce leaves and lemon.

Note: Tofu and scallops are a perfect combination, with the fresh soy sauce marinade adding a hint of spicy heat. This dish is ideal for a summer barbecue.
