Ingredients

  • 400g/14oz long-grained rice, rinsed

  • 1 Tbsp sunflower oil

  • 1 medium onion, sliced

  • 8 soy sausages, sliced diagonally

  • 1 green pepper, deseeded and sliced

  • 2 Tbsp mirin

  • 3 Tbsp Japanese soy sauce

  • 2 Tbsp sugar

  • 1/2 punnet cress, rinsed

Serves 4


Method:

  1. Cook the rice. Heat the oil in a frying pan and fry the onion, sausages and pepper for 4 to 5 minutes.

  2. Stir in the mirin, soy sauce and sugar and continue to fry for 3 to 4 more minutes.

  3. Place the rice in a serving bowl or on a plate and top with the sausage mixture.

  4. Garnish with the watercress and serve hot.

Note: For a lighter version of this recipe, substitute a green leaf and tomato salad for the rice.
