- Creamed Chicken Stew

oz soy margarine

8 chicken drumsticks, skinned

medium onion

3 carrots, cut into 1cm/1/2 in thickness

3 potatoes, quartered

2 3/4 cups/600ml/1 pt water

bouquet garni

salt and black pepper

100g/4oz button mushrooms

100g/4oz peas

2 Tbsp corn flour
-
1 3/4 cups/400ml/14fl oz soy milk

Serves 4
Method:

Melt the margarine in a pan and fry the drumsticks
for 4 to 5 minutes. Add the onion, carrot and potato
and fry for 2 to 3 minutes.

Add the water, bouquet garni and salt and pepper, bring to a boil and
simmer for 30 minutes. Skim the surface
occasionally.

Add the mushrooms and peas and
simmer for 15 minutes more. Dissolve the corn flour
in the soy milk and stir into the stew.

Simmer for
5 minutes more and serve hot.
Note:
Chicken on the bone imparts more flavor to this stew
than breast meat. Vegetarians may prefer to use
diced tofu or soy sausage as a substitute for the
chicken.
