Cod with Creamed
Mushroom Sauce

Ingredients

4 cod fillets

salt and black pepper

1 clove garlic, finely chopped

200g/7oz button mushrooms, chopped

1 Tbsp chopped fresh parsley

1 cup/250ml/8fl oz soy cream
-
boiled potatoes or long-grained
rice, to serve
Serves 4
Method:

Heat the oven to 180°C (350°F). Place the cod
fillets in an ovenproof dish and generously sprinkle
with salt and pepper.

Arrange the garlic, mushrooms,
parsley and cream over the cod.

Bake in the oven
for about 30 minutes. Serve hot with boiled potatoes
or rice.
Note: The
substitution of soy cream instead of dairy cream
helps to reduce the fat in this popular classic dish
without losing any flavor.
