Braised Tofu,
Onion and Egg on Rice

Ingredients

400g/14oz level Japanese short
grained rice

1 Tbsp sunflower oil

1 medium onion, sliced
-
1 1/4 cups/280ml/10fl oz Japanese fish
or vegan stock

2 Tbsp Japanese soy sauce
-
2 Tbsp mirin
-
2 tsp sugar
-
500g/1lb 2oz firm tofu, halved
lengthways and sliced into 1 cm/1/2in thickness

1tsp bonito flakes
-
2 eggs, beaten
-
2 spring onions, chopped
Serves 4
Method:

Cook the rice accordingly. Heat the oil in a frying pan, add the onion, and
fry for 2 to 3 minutes.

Add the stock, soy sauce, mirin and sugar. Bring to a boil, then add the tofu
and simmer for 5 minutes.

Sprinkle the bonito flakes
over the mixture and pour in the beaten egg. Cover
the pan and simmer for 2 minutes.

Place the rice in
a bowl or on a plate, and top with tofu mixture.
Garnish with spring onions.
Note: It
is very common in Japan to combine beaten egg with
meat and vegetables over rice or noodles. The most
well-know combination is "mother and child", meaning
beaten egg combined with chicken. This combination,
using tofu, is every bit as nutritious and derives
its delicious flavor from the use of mirin and soy
sauce.
