Braised Pork and
Soy Beans

Ingredients

1 Tbsp soy or sunflower oil

1 pork chop
-
3oog/10oz cooked soy beans

3 spring onions
-
2.5cm/1 in ginger, sliced

1 clove garlic, sliced

1/4 cups/300ml/1/2pt water

3 Tbsp Japanese or Chinese rice wine
-
5 Tbsp Japanese soy sauce
-
4 Tbsp sugar
Serves 4
Method:

1 Heat the oil in a frying pan and brown the pork
chops on both sides.

Put the chops, soy beans,
spring onions, ginger, garlic, water, rice wine, soy
sauce and sugar into a flameproof casserole dish.

Bring to a boil, then cover and simmer for 1 to 1
1/2
hours. Skim the surface occasionally.

Discard the
spring onions, ginger and garlic and serve hot with
rice.
Note:
This dish is strongly influenced by Chinese cuisine.
A traditionalist would want to use belly pork, but
here use pork chop. You can use either canned,
frozen or dried soy beans. If you cannot obtain
either Japanese or Chinese rice wine, a dry white
wine well make a good substitute as well.
