Baked Peppers
Stuffed with Soy Sausage Apricot and Rice

Ingredients

200g/7oz long-grained rice

1 Tbsp olive oil

2 cloves garlic, finely chopped

1 small onion,
finely chopped

6 soy sausages, chopped
-
10 dried
apricots, chopped
-
2 Tbsp raisins
-
2 tsp mixed herbs
-
salt and pepper
-
3 red peppers, tops cut off, 3 green peppers, tops
cut off, 2 yellow peppers, tops cut off,

1 3/4 cups/400ml/14fl oz vegetable
stock
Serves 4
Method:

Cook the rice according to the method described on
page 14. Heat the oil in a frying pan.

Add the
garlic, onion and sausages, and fry for 3 to 4
minutes.

Heat the oven to 190C (375F). Add the
apricots, raisins and mixed herbs and fry for 2 to 3
minutes. Add the cooked rice, stir, and season well
with salt and pepper.

Scoop out the peppers to
remove the seeds and ribs, and fill them with the
rice mixture; arrange them in an ovenproof dish.

Add
the stock. Cover them with the pepper lids on and
bake for 30 to 40 minutes. Can be served hot or
cold.
Note: A
healthy and satisfying summer dish that is equally
good served hot or cold.
