Basic Recipes - Soy Béchamel Sauce Recipe

Ingredients

  • 1 1/4 cups/300ml/1/2pt unsweetened soy milk

  • 3 sprigs of parsley

  • 4 black peppercorns

  • 1 slice of onion

  • 1 bay leaf

  • A pinch of ground nutmeg or mace

  • 30g/1oz soy margarine

  • 25g/1oz plain flour

  • Salt and pepper

Serves 4


Method:

  1. Put the milk, parsley, peppercorns, onion, bay leaf and nutmeg or mace in a pan.

  2. Slowly bring to boiling point, and simmer over a low heat for 4 to 5 minutes. Strain and allow to cool.

  3. Melt the margarine in a pan over a low heat. Add the flour and blend in well.

  4. Add the cooled milk a little at a time, mixing well with a spoon each time you add it.

  5. Repeat this process until all the milk has been used. Season with salt and pepper.
