Ingredients

5 cups/1.2L/2pt water

750g/1 1/2lb chicken bones or wings

1 onion, cut into
quarters

1 small carrot, roughly chopped

1 celery rib,
roughly chopped

2 bouquets garnis
-
4 black peppercorns
Makes about 5cups/1
liter
Method:

Put all the ingredients into a pan.

Bring to a
boil and simmer for 50 to 60 minutes. Skim the
surface occasionally.

Discard the bones and
vegetables, and strain the liquid through a fine
mesh strainer.
