Basic Recipes - Chicken Stock Recipe

Ingredients

  • 5 cups/1.2L/2pt water

  • 750g/1 1/2lb chicken bones or wings

  • 1 onion, cut into quarters

  • 1 small carrot, roughly chopped

  • 1 celery rib, roughly chopped

  • 2 bouquets garnis

  • 4 black peppercorns

Makes about 5cups/1 liter


Method:

  1. Put all the ingredients into a pan.

  2. Bring to a boil and simmer for 50 to 60 minutes. Skim the surface occasionally.

  3. Discard the bones and vegetables, and strain the liquid through a fine mesh strainer.
