Sesame Prawn Toasts Recipe

Ingredients

  • 175g/6 oz peeled, cooked prawns

  • 2 spring onions, finely chopped

  • 2.5cm/1 in fresh root ginger, peeled and grated

  • 2 garlic cloves, crushed

  • 30ml/2 tbsp corn flour

  • 10ml/2 tbsp soy sauce, plus extra for dipping

  • 6 slices stable bread from a small loaf, without crusts

  • 40g/1 1/2 oz sesame seeds

  • about 600ml/1 pint vegetable oil, for deep-frying

Serves 6


Method:

  1. Place the prawns, spring onions, ginger and garlic cloves into a food processor fitted with a metal blade. Add the corn flour and soy sauce and work the mixture into a paste.

  2. Spread the bread slices evenly with the paste and cut into triangles. Sprinkle with the sesame seeds, making sure they stick to the bread. Chill in the fridge for 30 minutes.

  3. Heat the oil for deep-frying in a large heavy-based saucepan until it reaches a temperature of 190C/375F.

  4. Using a slotted spoon, lower the toasts into the oil, sesame-seed side down, and fry for 2-3 minutes, turning over for the last minutes. Drain on absorbent kitchen paper. Keep the toasts warm whilst frying the remainder.

  5. Serve the toasts with soy sauce for dipping.
