Ricotta and Borlotti Bean Pate Recipe

Ingredients

  • 400g/14 oz borlotti beans

  • 175g/6 oz Ricotta cheese

  • 1 garlic clove

  • 60ml/4 tbsp melted butter

  • juice of 1/2 lemon

  • seasoning

  • 30nl/2 tbsp chopped fresh parsley

  • 15ml/1 tbsp fresh thyme or dill

Serves 4


Method:

  1. Process borlotti beans, Ricotta cheese, garlic clove, melted butter, juice of 1/2 lemon and seasoning. Add chopped fresh parsley and fresh thyme or dill; blend.

  2. Spoon into one serving dish or four lightly-oiled and base-lined ramekins. Chill. Garnish with salad leaves and serve with warm crusty bread or toast.

  3. If serving the pate individually, turn each one out of its ramekin on to a plate, then remove the paper. Top the pate with radish and sprigs of dill.
