Ricotta and Borlotti Bean Pate Recipe
Ingredients

400g/14 oz
borlotti beans
-
175g/6 oz
Ricotta cheese
-
1 garlic
clove
-
60ml/4 tbsp
melted butter
-
juice of 1/2
lemon
-
seasoning
-
30nl/2 tbsp
chopped fresh parsley
-
15ml/1 tbsp
fresh thyme or dill
Serves

Method:

Process
borlotti beans, Ricotta cheese, garlic clove, melted
butter, juice of 1/2 lemon and seasoning. Add
chopped fresh parsley and fresh thyme or dill;
blend.

Spoon into
one serving dish or four lightly-oiled and
base-lined ramekins. Chill. Garnish with salad
leaves and serve with warm crusty bread or toast.

If serving
the pate individually, turn each one out of its
ramekin on to a plate, then remove the paper. Top
the pate with radish and sprigs of dill.
