Nut Patties with Mango Relish Recipe
Ingredients

175g/6 oz
finely chopped roasted and salted cashew nuts

175g/6 oz
finely chopped walnuts

1 small
onions, finely chopped
-
1 garlic
clove, crushed
-
1 green
chili, seeded and chopped
-
5ml/1 tsp
ground cumin
-
10ml/2 tsp
ground coriander
-
2 carrots,
coarsely grated
-
50g/2 oz
fresh white breadcrumbs
-
30ml/2 tbsp
chopped fresh coriander
-
15ml/1 tbsp
lemon juice
-
1-2 eggs,
beaten
-
salt and
ground black pepper
-
fresh
coriander sprigs, to garnish
For
the
relish:
-
1 large ripe
mango, cut into small dice
-
1 small
onion, cut into slivers
-
5ml/1 tsp
grated fresh root ginger
-
pinch of
salt
-
15ml/1 tbsp
sesame oil
-
5ml/1 tsp
black mustard seeds
Serves
4-6
Method:
-
Preheat the
oven to 180C/350F/Gas 4. In a bowl, mix together the
nuts, onion, garlic, chili, spices, breadcrumbs,
carrots, chopped coriander and seasoning.

Sprinkle the
lemon juice over the mixture and add enough of the
beaten egg to bind the mixture together.

Shape the
mixture into twelve balls, then flatten slightly
into round patties. Place them on a lightly greased
baking sheet and bake for about 25 minutes, until
golden brown.

To make the
relish, mix together the mango, onion, fresh root
ginger and salt.

Heat the oil in a small frying pan
and fry the mustard seeds for a few seconds until
they pop, then stir into the mango mixture. Serve
with the nut patties, garnished with coriander.
