French Goat's Cheese Salad Recipe

Ingredients

  • 200g/7 oz bag prepared mixed salad leaves

  • 4 rashers rind less back bacon

  • 16 thin slices French bread

  • 115g/4 oz full-fat goat's cheese

For the dressing

  • 60ml/4 tbsp olive oil

  • 15ml/1 tbsp tarragon vinegar

  • 10ml/2 tsp walnut oil

  • 5ml/1 tsp Dijon mustard

  • 5ml/1 tsp wholegrain mustard

Serves 4


Method:

  1. Preheat the grill to a moderate heat. Rinse and dry the salad leaves, then arrange in four individual bowls. Place the ingredients for the dressing in a screw-top jar, shake together well and reserve.

  2. Lay the bacon rashers on a board, then stretch with the back of a knife and cut each into four. Roll each piece up and grill for about 2-3 minutes.

  3. Meanwhile, slice the goat's cheese into eight and halve each slice. Top each slice of bread with a piece of goat's cheese and pop under the grill. Turn over the bacon and continue cooking with goat's cheese toasts until the cheese is golden and bubbling.

  4. Arrange the bacon rolls and toasts on top of the prepared salad leaves, shake the dressing well and pour a little of the dressing over each one.
