Dim Sum Recipe

Ingredients

For the dough:

  • 150g/5 oz plain flour

  • 50ml/2 fl oz boiling water

  • 25ml/1 fl oz cold water

  • 7.5ml/1/2 tbsp vegetable oil

For the filling:

  • 75g/3 oz minced pork

  • 45ml/3 tbsp chopped canned bamboo shoots

  • 7.5ml/1/2 tbsp light soy sauce

  • 5ml/1 tsp dry sherry

  • 5ml/1 tsp demerara sugar

  • 2.5ml/1/2 tsp sesame oil

  • 5ml/1 tsp corn flour

  • mixed fresh lettuce leaves such as iceberg, frisee or Webb

Serves 4


Method:

  1. To make the dough, sift the flour into a bowl. Stir in the boiling water, then the cold water together with the oil. Mix to form a ball and knead until smooth. Divide the mixture into sixteen equal pieces and shape into circles.

  2. For the filling, mix together the pork, bamboo shoots, soy sauce, sherry, sugar and oil. Then stir in the corn flour.

  3. Place a little of the filling in the centre of each dim sum circle. Carefully pinch the edges of the dough together to form little "purses".

  4. Lime a steamer with a damp dish towel. Place the dim sum in the steamer and steam for 5-10 minutes.

  5. Serve on a bed of lettuce with soy sauce, spring onion curls, sliced red chili and prawn crackers, if you wish.

Notes: As an alternative filling, substitute the pork with cooked, peeled prawns.
