Devilled Kidneys Recipe

Ingredients

  • 10ml/2 tbsp Worcestershire sauce

  • 15ml/1 tbsp each English mustard. lemon juice and tomato puree.

  • cayenne pepper and salt

  • 40g/1 1/2 oz butter

  • 1 chopped shallot

  • 8 lambs' kidneys

  • chopped parsley

Serves 4


Method:

  1. Mix 10ml/2 tbsp Worcestershire sauce, 15ml/1 tbsp each English mustard, lemon juice and tomato puree. Season with cayenne pepper and salt.

  2. Melt 40g/1 1/2 oz butter, add 1 chopped shallot; cook until softened.

  3. Stir in 8 prepared lamb's kidneys; cook for 3 minutes on each side/ Coat with the sauce; serve sprinkled with chopped parsley.
