Devilled Kidneys Recipe

Method:

Mix 10ml/2
tbsp Worcestershire sauce, 15ml/1 tbsp each English
mustard, lemon juice and tomato puree. Season with
cayenne pepper and salt.

Melt 40g/1 1/2 oz butter,
add 1 chopped shallot; cook until softened.

Stir in 8
prepared lamb's kidneys; cook for 3 minutes on each
side/ Coat with the sauce; serve sprinkled with
chopped parsley.
