Avocados with Tangy Topping Recipe

Ingredients

  • 15ml/1 tbsp sunflower oil

  • 1 small red onion. sliced

  • 1 garlic clove, crushed

  • dash of Worcestershire sauce

  • 2 ripe avocados, stoned and halved

  • 2 small tomatoes, sliced

  • 15ml/1 tbsp chopped fresh basil, marjoram or parsley

  • 50g/2 oz Lancashire or mozzarella cheese, sliced

  • salt and ground black pepper

Serves 4


Method:

  1. Heat the oil in a frying pan and gently fry the onion and garlic for about 5 minutes until just softened. Shake in a little Worcestershire sauce.

  2. Preheat to a grill. Place the avocado halves on the grill pan and spoon the onions into the centre.

  3. Divide the tomato slices and fresh herbs between the four halves and top each one with the cheese.

  4. Season well with salt and pepper and grill until the cheese melts and starts to brown.
