Haddock and Broccoli Chowder Recipe

Ingredients

  • 4 spring onions, sliced

  • 450g/1 b new potatoes, diced

  • 300ml/1/2 pint home-made fish stock or water

  • 300ml/1/2 pint skimmed milk

  • 1 bay leaf

  • 225g/8 oz broccoli florets, sliced

  • 450g/1 lb smoked haddock fillets, skinned

  • 200g/7 oz can sweet corn, drained

  • ground black pepper

  • chopped spring onions, to garnish

Serves 4


Method:

  1. Place the spring onions and potatoes in a pan and the stock, milk and bay leaf. Bring to the boil, reduce the heat, cover and simmer for 10 minutes.

  2. Add the broccoli. Cut the fish into bite-size chunks; add to the pan with the sweet corn.

  3. Season well with black pepper, then cover again and simmer until the fish is cooked through.

  4. Remove the bay leaf, scatter over the chopped spring onions and serve immediately.
