Cock-a-leekie Soup Recipe

Ingredients

  • 1.2l/2 pints chicken stock

  • 4 leeks into 2.5cm/1 in slices

  • 8-12 soaked prunes

Serves 4-6


Method:

  1. Gently cook 1.2l/2 pints chicken stock and bouquet garni for 40 minutes.

  2. Cut 4 leeks into 2.5cm/1 in slices, add to the pan along with 8-12 soaked prunes and cook gently for 20 minutes.

  3. Discard the bouquet garni. Remove the chicken, discard the skin and bones and chop the flesh. Return the chicken to the pan and season to taste.

  4. Heat the soup, then serve with soft buttered rolls.
