Ingredients

  • 1 potato, peeled

  • 1 small fresh red chili, deseed

  • 5 garlic cloves, peeled

  • A few saffron threads

  • 2 egg yolks

  • 150 ml/1/4 pint olive oil

  • Salt

Makes 250ml/8fl oz


Method:

  1. Cook the potato in boiling salted water until tender. Drain and set aside.

  2. Put the chili, garlic, saffron and potato in a mortar and grind well. Alternatively, blend until smooth in a blender.

  3. Whisk in the egg yolks and slowly drizzle in the olive oil. Continue whisking until the mixture is thick and smooth. Season with salt, if wished.
