Ingredients

  • 1 egg

  • 2 egg yolks

  • 4 tablespoons heavy cream

  • 1/2 teaspoon hot mustard

  • 250 ml sunflower oil

  • Juice of 1/2 lemon

  • Cayenne pepper

  • Salt

  • Sugar

Makes 500ml/16fl oz


Method:

  1. Put the egg, egg yolks, cream, mustard and sunflower oil into a tall container.

  2. Stand a hand blender on the bottom of the container and then move it slowly from the bottom to the top on the lowest setting.

  3. Season with lemon juice, cayenne pepper, salt, and sugar to taste. Pour into a suitable container, close tightly and refrigerate.

  4. Alternatively, you can use an electric blender or small food processor.
