Ingredients

  • 4 egg yolks

  • 90 ml/3 fl oz white wine

  • 180 g/6 oz melted unsalted butter

  • Salt

  • Cayenne pepper

  • Juice of 1/2 lemon

Serves 4


Method:

  1. Place the egg yolks and white wine in the top of a double boiler and whisk over hot, but not boiling, water until smooth.

  2. Take the mixture off the heat and gradually add melted butter in a slow, steady stream while whisking.

  3. Season with salt, cayenne pepper and lemon juice.

Note: Hollandaise sauce is a light, creamy sauce which goes especially well with salmon. By adding fresh herbs to the sauce, it becomes Béarnaise sauce.
