Hollandaise Sauce Recipe
Ingredients

Method:

Place
the egg yolks and white wine in the top of a double boiler and whisk
over hot, but not boiling, water until smooth.

Take the mixture off
the heat and gradually add melted butter in a slow, steady stream
while whisking.

Season with
salt, cayenne pepper and lemon juice.
Note:
Hollandaise sauce is a light, creamy sauce which goes especially
well with salmon. By adding fresh herbs to the sauce, it becomes
Béarnaise sauce.
