Swedish Salmon Soup with Green Asparagus Recipe
Ingredients

500 g/1 lb
green
asparagus
-
250 g/8 oz peeled potatoes
-
1 fennel bulb
-
4 tomatoes
-
2 onions, peeled
-
3
tablespoons olive oil
-
1/4 teaspoon crushed fennel seeds
-
2 tablespoons Pernod
-
500 ml/18 fl oz fish stock (refer
recipe)

Salt
-
Cayenne pepper
-
500 g/1 lb raw salmon fillet
-
200 ml/7 fl oz
soured cream
Serves 4
Method:

Peel only the lower third of each asparagus spear and
cut diagonally into 2 cm/1 inch long pieces. Cut the
potatoes into 1 cm/1/2 inch cubes. Cut the fennel into
diamond-shaped pieces.

Remove the stem end of the tomatoes, cut a cross in the
top and briefly immerse in boiling water. Rinse under
running cold water, skin, cut into quarters, deseed
and dice.

Chop the onions and sauté in the hot olive oil in a
large
saucepan. Add the potatoes, fennel, fennel seeds and
tomatoes. Pour in the Pernod and fish stock and season
with salt and cayenne pepper.

Simmer for 20 minutes, add the asparagus and simmer for
another 5 minutes.

Cut the salmon fillet into 2 cm/1 inch cubes and add o
the hot soup. Allow to stand for 2 minutes, then ladle
into preheated bowls and serve with a dash of soured
cream.
