Ingredients

  • 150 g/5 oz sauerkraut

  • 30 g/1 oz unsalted butter

  • 30 g/1 oz plain flour

  • 1 liter/12/3 pints fish stock (refer recipe)

  • 1 bay leaf

  • 250 ml/8 fl oz double cream

  • Salt

  • Freshly ground white pepper

  • 1 teaspoon sugar

  • 150 g/5 oz smoked salmon, cut into strips

Serves 4


Method:

  1. Coarsely chop the sauerkraut. If the sauerkraut is too sour, place in a colander and briefly rinse under running cold water.

  2. Melt the butter, add the flour and beat with a whisk. Add the cold fish stock and whisk thoroughly until smooth. Add the sauerkraut and bay leaf and simmer for 20 minutes.

  3. Beat in the cream and season with salt, pepper and sugar. Add the smoked salmon strips and serve.
