Potato and Leek Soup with Salmon and Bacon Recipe
Ingredients

2 medium leeks
-
1 shallot, finely
chopped

30 g/1 oz unsalted butter
-
1 potato,
peeled
-
500 ml/16 fl oz
fish stock
-
2 tablespoons
crème fraiche
-
Salt
-
A pinch
of
freshly ground nutmeg

150 g/5 oz
salmon, cut into 3 x 1 cm/1 x
1/2
inch strips
-
1 tablespoon
chopped chervil leaves
-
1 tablespoon
diced bacon, sautéed
Serves 4
Method:
-
Cut
off the dark green
tops
from
the leeks, cut in half, rinse thoroughly and thinly
slice.

Cook
the shallot in the butter until soft and translucent.
Then add the leek and diced potato. Pour in the fish
stock and simmer over a low heat for 10 minutes.

Stir in
the crème fraiche and season with salt and nutmeg. Add
the salmon strips and chervil leaves to the soup, bring
to the boil and immediately ladle the soup into 4
preheated soup bowls. Sprinkle with sautéed bacon and
serve.

If
you are watching your figure, this soup can be prepared
without the bacon. However, it's better to forget about
the calories and just enjoy it because it is the bacon
that gives this dish the final touch.
