Pea Soup with Smoked Salmon, Croutons and Fresh Mint Recipe
Ingredients

2 shallots,
finely chopped
-
1/2 garlic clove
-
2 spring onions,
thinly sliced

40 g/1 1/2 oz unsalted
butter
-
800 g/13/4lb peas in their pods
-
400 ml/14 fl oz chicken stock
-
50 ml/2 fl oz
double cream
-
Salt
-
Freshly ground
nutmeg Lemon juice
-
5 mint leaves
-
100 g/31/2
oz
smoked salmon, cut into
strips
-
30 g/1 oz croutons
Serves 4
Method:

Cook the shallots, garlic and spring onions in the
butter until soft and translucent. Shell the peas and
add to the pan with the chicken stock. Simmer gently for
10 minutes.

Stir the soup and strain through a sieve. Return to the
pan, bring to the boil and stir in the cream. Season
with salt, nutmeg and lemon juice and remove from the
heat.

Finely chop the mint leaves just before serving and add
to the soup with the smoked salmon strips.

Ladle the soup into preheated bowls and sprinkle with
croutons.
