Side Dishes Recipes - Vegetable Rice Recipe

Ingredients

  • 2 shallots, finely chopped

  • 2 garlic cloves, finely chopped

  • 1/2 red, 1/2 yellow and 1/2 green pepper, deseeded and diced

  •  4 tablespoons olive oil

  • 150 g/5 oz short-grain Spanish rice, e.g. Valencia

  • 125 g/4 oz frozen peas

  • Salt

  • Freshly ground white pepper

  • 250 ml/8 fl oz fish stock (refer recipe)

  • 1 tablespoon chopped parsley

Serves 4


Method:

  1. Cook the shallots and garlic in the olive oil until soft and translucent.

  2. Add the diced peppers and sauté quickly. Preheat the oven to 180°C (350°F), Gas Mark 4.

  3. Stir in the rice and peas and season with salt and white pepper.

  4. Add the fish stock, cover with a lid and bake in the hot oven until the rice is cooked and tender.

  5. Before serving, mix in the freshly chopped parsley.
