Vegetable Rice Recipe
Ingredients

2 shallots, finely
chopped
-
2 garlic cloves,
finely chopped

1/2 red, 1/2
yellow and 1/2 green pepper, deseeded and
diced
-
4 tablespoons olive oil
-
150 g/5 oz short-grain
Spanish rice, e.g. Valencia
-
125 g/4 oz
frozen peas
-
Salt
-
Freshly ground white
pepper
-
250 ml/8 fl oz fish stock (refer
recipe)
-
1 tablespoon chopped
parsley
Serves 4
Method:
-
Cook the shallots and garlic in the olive oil until
soft and translucent.
-
Add the diced peppers and sauté quickly. Preheat the oven to 180°C (350°F),
Gas Mark 4.

Stir in the rice and peas and season with salt and
white pepper.
-
Add the fish stock, cover with
a lid and bake in the hot oven until the rice is
cooked and tender.
-
Before serving, mix in the freshly chopped parsley.
