Ingredients

1 white onion

1 bay leaf
-
2 cloves
-
150 g/5 oz long-grain
rice
-
10 g/1/3 oz unsalted
butter
-
300 m1/1/2 pint vegetable stock

g/2/3 oz chilled butter
Serves 4
Method:
-
Peel the onion and
insert the bay leaf and 2 cloves. Preheat the oven
to 180°C (350°F), Gas Mark 4.
-
Briefly heat the
long-grain rice in the butter, and add the onion and
stock.
-
Cover and cook for about 15 minutes in the
hot oven.
-
Remove the
onion and stir in small pieces of the chilled butter
with a large fork.
