Ingredients
Serves 4
Method:

Remove the stem end of the tomatoes, cut a cross in
the top and briefly immerse them in boiling water.

Rinse under running cold water. Peel off the skin,
cut into quarters, remove the seeds and dice.

Briefly sauté the shallots and garlic in olive oil.
Add a sprig of thyme and the diced tomatoes and
season with salt, pepper and sugar.

Simmer for about
10 minutes until a thick sauce forms.

Finally, mix in the finely chopped basil leaves and
season with freshly ground pepper.
